The Johnston family is a nuclear family. It consists of David, 56, who works as a waiter at a local restaurant. Mary, 55, works as a classroom assistant at the local primary school. They have two children, Richard, 26, who works full time as an accountant and Rebecca, 24, who is a nurse. David is recovering from stroke which resulted in paralysis on one side of his body.
The physical need of maintaining a balanced diet is met through Mary who cooks David nutritious food with low fat and low cholesterol. Mary ensures that David’s cholesterol intake to below 300 milligrams a day and the salt intake to less than 2,400 milligrams a day. Mary uses alternative salt-free seasonings such as herbs, spices, or fruit juices to flavour David’s foods to reduce the salt intake. To reduce the cholesterol intake Mary reduced meat and dairy products from the diet plan and added more vegetables, fruits and whole grain products.
